Are you feeling lazy? I sure am. I didn’t even bother putting on a bra today. FREEDOM!!
On days like this, I just want to watch 90s movies. I’m well aware that getting all nostalgic over this particular decade is a little embarrassing, but I could watch the following movies on repeat forever: Hook, You’ve Got Mail, Encino Man, Home Alone…there are others I’m forgetting. Or not mentioning out of pure shame. (cough,cough,masterpiecetheatreprideandprejudicewithcolinfirth,cough,cough)
This muffin recipe is absolutely perfect for when you are feeling lazy and don’t want to put much effort into your snack making. But otherwise, it’s a subtly sweet muffin made with easy-peasy ingredients. Add chocolate chips if you’re looking for more of a dessert.
So go ahead! Pop these in the oven, crawl back into bed and scroll through Facebook while you wait. Oh look! Another passive aggressive status update! Yay.
Sweet Plantain Muffins:
makes 6 to 8 muffins
1 ripe plantain, peeled and sliced
1/4 cup coconut oil
1/4 cup coconut milk
1/2 cup coconut palm sugar
3 teaspoons maple syrup (optional)
1 1/2 cups almond flour
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
Preheat oven to 325 and grease muffin pan with a little coconut oil.
1. Using a stand mixer or food processor, combine plantain, coconut oil and coconut milk and mix until smooth.
2. Add eggs, vanilla, maple syrup and coconut palm sugar.
3. Combine the almond flour, baking powder, cinnamon and salt in a small bowl, then add to the wet ingredients. Mix until well combined.
4. Distribute into greased muffin pans and bake for 30 minutes, until golden on top.
